I was looking for a quick chocolate fix when I came across this easy recipe on (never home) maker. It’s the kind of recipe that uses things most people already have in their cupboards and it requires no baking and less than 5 minutes of prep work… perfect!

I amended it slightly and rather than use the exact ingredients that Ashley used, I opted for regular milk, less chocolate chips (about 1/2 of what the recipe calls for), added sliced almonds, and a touch of agave syrup.

I mixed it all together as per instructions and then let it sit overnight in the fridge. Unfortunately, while Ashley’s efforts yielded perfect granola bars, my mixture never quite firmed up. So even after a night of refrigeration, it continued to be slightly crumbly and loose.

The solution? When life hands you granola, make yoghurt fruit parfaits! I broke the mixture into chunks and layed them across the bottom of a wine glass. I then added a dollop of plain greek yoghurt and some blackberries on top. The perfect summer mid-day treat… for additional enjoyment, please consume outdoors while watching a dog play or over conversations on your patio with friends.

These look yummy, in any form. I think the chocolate, once it re-hardens, is what is holding the bars together. Try increasing the quantity.
